Sourdough Discard Cornbread

About the Recipe

One thing about me- I'm gonna find a recipe to use up all the discard I have stored in my fridge. Cornbread is one of my favorites and we eat it a lot, especially since we have some type of soup or chili at least twice a week.

Ingredients

  • 1/4 c. of butter, ghee or coconut oil (melted)

  • 1 c. cornmeal

  • 1 c. flour

  • 1/4 c. sugar

  • 4 tsp baking powder

  • 1/2 tsp salt

  • 1 c. plant based or raw milk

  • 1/2 c. sourdough starter

  • 2 eggs, beaten

Preparation

Step 1

Preheat oven to 400°F.


Step 2

Mix the flour, cornmeal, sugar, baking powder, and salt in a bowl.


Step 3

Add the milk, sourdough starter, melted butter and the beaten eggs to the dry ingredients and mix well.


Step 4

If you are using a baking dish , make sure to grease the sides and bottom so it doesn't stick, pour batter in pan and smooth the top


Step 5

Bake for 25-30 minutes until golden brown and a toothpick inserted in the middle comes out clean.
