I am not exaggerating when I say I've made a batch of this granola every single week for a year now. The original recipe came from Henry's mom and it was love at first bite and I've added a few ingredients since then to make it my own. It is the perfect 2nd breakfast and perfect snack when you don't feel like cooking and you can eat it as is or add some dark chocolate chips with some cashew milk. Feel free to substitute whatever you want in this recipe and make it yours- I will sometimes add sunflower seeds or substitute walnuts with pecans. If you like your granola a little sweeter you can also add 1/4 cup of brown sugar to this recipe, but I find that the maple syrup makes it sweet enough for my taste.

Ingredients
3 cups organic oats
1 1/2 cups walnuts
1 cup ground flax seeds
1 cup coconut chips
1 cup pumpkin seeds
1/2 cup olive oil
3/4 cup maple syrup
1/2 tsp salt
Preparation
Step 1
Preheat oven to 300° F, cover a baking sheet with parchment paper
Step 2
Mix oats, walnuts, flax seeds, coconut chips, pumpkin seeds, olive oil, and maple syrup together and spread on baking sheet. Sprinkle with salt.
Step 3
Bake for 20 minutes, flip tray and bake for another 30 minutes until slightly brown.
